Cooking lesson with Franca – Cream Catalana

This evening, Franca taught us how to make Cream Catalana. We have tried to make it a couple times at home following her translated recipe, but we could not get it right. Now I think I just might be able to do it.

Franca separates the egg yolks from the whites. Use the yolks, set the whites aside for another dish......

mix well with wooden spoon by hand.....

Add egg mixture to warm milk & cream mixture.....

Ladle into bowls.....

Let cool at room temperature before putting in refrigerator......

Heat branding tool... a torch is fine to use too - just not too long.

Add thin layer of sugar to top of cream catalana to be melted....
